Keto Pickle Popper Recipe

With Football Season upon us, and epic tailgating parties and potlucks an eventuality you will want to make this recipe more than once this year. This Keto-friendly Pickle Popper Recipe will be a hit at the party, even among your non-Keto friends and family. This is a fun alternative to Jalapeno Poppers and Potato Skins, and the pickles and extra sodium will help you if you are experiencing muscle cramps or even the Keto Flu.

The only real trick to making these is to make sure that you bake them long enough to make the bacon crisp, and to use an oven rack on your pan. You will definitely want to listen to the advice to line the baking sheet with foil beforehand, as this will save you SO MUCH time later when it comes to cleaning the dishes later.

All of the ingredients used here in this Pickle Popper recipe should all be readily available at all grocery stores, which makes this one of the simplest recipes that we have produced to date. No hunting down obscure ingredients to prepare a fancy dish, you might even already have most of this at home. I recommend 3 of these per serving, but feel free to modify to your needs. The pickles seem to be way more filling the jalapeños in this dish, and I found myself eating 5 before being completely stuffed.

For dipping sauce these pair well with your typical Ranch Dressing, or also some Sour Cream. You can really make whatever dipping sauce you feel like, even a spicy one to kick things up a notch. I even highly encourage some creativity with this recipe, and I can see people also opting to put diced jalapeños into the cream cheese mixture instead of the chives, and simple modifications like that.

INGREDIENTS

  • 6 Medium Dill Pickles (Halved)
  • 6 Ounces Cream Cheese
  • 3/4 Cup Cheddar Cheese (Shredded)
  • 1 TBSP Chives
  • 1/2 TBSP Red Pepper Flakes
  • 12 Slices Smoked Bacon
  • Favorite Dipping Sauces

INSTRUCTIONS

  1. Pre-Heat the Oven to 400*F.
  2. Slice your Pickles in half, and gut out the seedy section in the middle using a teaspoon.
  3. Pat the Pickles dry in all around with a paper towel to remove excess moisture.
  4. In a Large Mixing Bowl combine the Cream Cheese, Cheddar Cheese, Chives, and Red Pepper Flakes, and blend with a hand mixer for about 1 minute.
  5. Fill the middle of the pickles with the Cream Cheese Mixture, I find this easiest to do by hand, but feel free to use a pastry bag if you want to get fancy.
  6. On a Large Baking Sheet cover it with Aluminum Foil, and a Wire Baking Rack. This will all allow for even cooking and easy cleanup later. If you don’t have a baking rack you wont really get the bottoms of the poppers equally crispy, but they will still turn out okay.
  7. Wrap the pickles in bacon in a spiral manner and place onto the Baking Rack.
  8. Bake in the oven at 400*F for about 35-40 minutes, but this will vary depending on how long it takes for your particular bacon to crisp up. I use Kirkland Signature Bacon from Costco, which is rather thick and that may add to the baking time in my case.
  9. Remove from the oven and allow to cool on the counter for about 5 minutes before serving.
  10. Pair with your favorite dipping sauces.

SPECIAL NOTE: Go wild with this one and experiment with different ingredients in the Cream Cheese mixture.

        1. Works well in the air fryer, but since you have to space them out to allow the bacon to crisp I generally can’t fit too many at a time in the air fryer.

The only problem with this recipe is the “SODIUM” it is very high and the bacon which ” I LOVE TOO, but I will try it once in awhile because the recipe looks great, but I have to watch my salt intake because of my blood pressure, and salt too much retains water in the body. Thank you for your recipes keep posting them.

    1. I said the same thing.. Jalapeno’s would have no sodium.. why not use them instead??

      1. Judy, pickles contain sodium and electrolytes that are great for people eating Keto. And I wanted to be more original than Jalapeno Poppers on that particular day.

      1. Are Vlasic pickles the best ones to use? I bought some mount olive dill pickles and don’t like them at all. I just can’t remember which are my favorite and I think it’s Westlake but I can’t remember. Any help?

    3. of course consult your physician but being in ketosis results in the body getting rid of salt through natriuresis (along with water). Carbohydrates are what causes the body to retain water and associated salt. I need about 3-5g of added salt everyday.

      1. Jon is correct! I was retaining so much water my skin was cracking and splitting. It didn’t matter what diet I followed, how I limited salt, I still had such pain in my legs and feet! I tried Keto and within a week the water flushed out and I have said goodbye to bloating and swelling!!

        1. Sadly I was the same, as soon as I started using more salt my legs quit holding water. I use to pit about an inch and it would take hours to go down. I always blamed it on 800mg advil 3 times a day.

    4. This is Keto. It requires high sodium for it to work. I, too, had hypertension and I have been on Keto for most of this past year and was required for o take in 2,500 -3,000 of sodium. I have lost 60 lbs and am no longer on the two blood pressure medications I was taking. You have to do it right if it is going to work. You have to log everything you eat, drink lots of water and get the required sodium.

    5. Try making the Pickle Poppers with a low sodium turkey bacon from Jenny O or Butterball and whipped cream cheese. All less sodium and cholesterol. The Keto Diet still isn’t the most healthy diet to stick to for long periods of time.

    6. Salt is GOOD for our bodies…BUT it has to be a balance of sodium, magnesium, and potassium.

  5. I have been on the ketos diet and love the food I eat, however, I have not lost a single pound. How long does it take to see some results. What am I doing wrong. I stay under 30 grams of carbs a day.

    1. The “Low Carb” diet and the “Ketogenic” diet, although similar, are TWO DIFFERENT DIETS so you need to decide which one you want – you can’t do both and be successful. I would research (Google) them to learn more about them and their differences before continuing. Also, there are several good support groups on FaceBook for either way of eating. Good luck – you can do it!

    3. Not enough information. How many calories are you eating? 🤔 You have to be at a 25 to 35% déficit for weight to come off, and if you’re clinically obese, you have lots of fat on your body. There are two ways of adding fat to a ketogenic diet. Store bought or abnormal body fat. The choice is yours.     1. I’ve never purchased Veggie Bacon. If it crisps up like regular bacon I would imagine it would work.

  13. How long would you cook these at 350° instead of 400°? I have a nuwave oven n it only goes to 350 degrees. My regular oven is not working at the moment. Thanks.

    1. You just want to cook them until the bacon is crispy to your liking. I wonder if it will really crisp up at 350F though. But you can give it a try, as you just cook it as long as needed until your bacon is the way you like it.

    1. They can be, but like most foods, are going to be best when fresh.

  15. One of our ladies from work brought these in for our potluck. They were not only amazing, but didn’t last long. Didn’t need any dip. Can’t wait to make them myself and will enjoy as a meal. Will use my air fryer since I love the way bacon comes out in it.

    1. I use Marzetti classic ranch found in HEB. It’s kept cold and located by salad vegetables section in my store. I gram carb for 2 tablespoons

  18. I love this recipe, and to cut down the salt I used low sodium bacon, low sodium dills and soaked them in plain water to draw out more salt, then added a dash of dill to the mix. AWESOME. I am also planning on making this with home grown pickles soaked in Apple Cider Vinegar with fresh picked dill and using thin steak strips instead of bacon, should be interesting. THANK YOU SO MUCH FOR POSTING THIS RECIPE, it has inspired me to go crazy with ideas.
