I worked in a Deli for a couple of years as a teenager, and one of my favorite side dishes we made there for the cold case was a Broccoli Salad. It always shocked me how much sugar we would put in the Mayo, yet people often thought of it as a healthy option. There was probably more sugar in that stuff than in a slice of cake. It sure did taste great though!

I figured with all of the available low-glycemic sweeteners on the market today that there would be a way to make a Keto-friendly version of this if I just omitted the raisins and substituted the nuts and sugar for their Keto counterparts. Since we made that salad at the Deli with Cashews, I wanted a lower carb nut than that (there’s enough carbs in the Broccoli afterall) but I didn’t want a strong woody nut like a Walnut in the salad. I settled on using Macadamia Nuts, but you could also chose to use slivered almonds, or splurge for the Cashews too if you want instead.

You will also note that I also swapped out the traditional Mayo for an Avocado Mayo, and that is because the oils and other ingredients used in the Chosen Foods Avocado Mayo is Keto-friendly, unlike your normal Kraft Mayo that contains some ingredients that most Ketoers shy away from. If you are worried that this somehow makes the salad taste like an avocado, don’t worry. The Avocado Oil used in the Mayo is just made from the Avocado Seed and not from the green fleshy part of the plant.

For substituting the sugar, this was an easy choice, as I have recently become very fond of Erythritol-based sugar substitutes and in particular Lakanto Monkfruit Sweetener, which is mainly Erythritol. This one just doesn’t seem to have any aftertaste for me, though it can be a little bit pricey at times. If you prefer to use something else, like Swerve or Pyure feel free as well. You wouldn’t have to run out and buy a totally different sweetener just for the sake of making this Broccoli Salad.

KETO BROCCOLI SALAD RECIPE

Total Time: 15 Minutes

Ingredients:

Instructions:

  1. Separate the Broccoli Florets into as small of pieces as possible and place in a Large Mixing Bowl.
  2. Place Macadamia Nuts into a Ziploc Bag and crush with a mallet, or place in a food processor to grind briefly.
  3. In a Small Mixing Bowl combine Chosen Foods Avocado Mayo with Bragg Organic Apple Cider Vinegar and Lakanto Monkfruit Sweetener and stir for a couple minutes. Some of the sweetener will dissolve, but not all of it right away, and that is okay as long as you have it stirred very well.
  4. Sprinkle the Bacon, Red Onion, and Macadamia Nuts onto the Broccoli, and scoop in the Mayo Mixture.
  5. Fold the ingredients together for a couple minutes, being careful not to be too rough with the Broccoli.
  6. You can either serve right away if you prefer your Broccoli Salad to be crisp and crunchy, or you can cover in plastic wrap or place into an airtight container and store in the refrigerator over night and serve the next day. This should keep well in the refrigerator for at least 2 days this way.

  1. This looks delicious!! Do you use salted or unsalted nuts?

    1. The macadamia nuts I used in the video were salted, but you could use them either way! My grocery store only had the salted version in store so I made it with what they had available. In the past when I used cashews those were always salted too.

        1. So how much would ONE single serving be? I see the whole thing is 10 servings.

          1. Looks like with all the ingredients 10 servings makes 5 ish cups so one serving is half a cup

      This is so very yummy ,
      This salad be pretty spendy to make yet so worth it .
      I added 2T of hulled hemp seeds .
      Also yesterday I made a batch of Guacamole. I took a bite of this great salad and also dipped it in to the guacamole. Very yummy as well. Thank you for sharing this great recipe

    1. 1/10th of the batch. For some awful reason a serving size of broccoli (according to traditional standards) is only 1/2 a cup….like, who eats so little?

  7. I don’t care for macadamia nuts, how about using slivered almonds or chopped pecans or walnuts?

  8. Can you sauté the onions? My tummy can’t handle raw onions.

    1. I set the chopped red onions in ice water for about 30 minutes (Food Network trick) and it takes all the bite away – sweet onion left behind.

  9. I used the suggested amount of monk fruit sweetener but it came out way to sweet! What can I add to balance out that taste? More mayo or vinegar?

    1. You can use more Mayo if you wish. If that amount is too sweet to your liking, next time just reduce it by the amount you would prefer. This dish is typically served very sweet in the non-keto version (twice as much sugar as what we used monkfruit if you can believe that!)

      1. But remember Lakanto is much more seeer and it’s more concentrated than sugar. Even if another recipe uses sugar the Lakanto version will be very sweet. You’re better off eliminating Lakanto altogether from the recipe as who needs the extra carbs?

    Where do you buy the monkfruit and the chosen food avocafo mayo. I never heard of them.

    1. I have found the Chosen Foods Avocado Oil Mayo at Costco and Kroger. They sell that brand now at a lot of store, oh and I even bought it at Walmart too! The monkfruit sweetener I have been buying at Sprouts or even directly through the Lakanto Website since they give all of the Keto Daily fans 20% OFF on their site if you use the coupon code ‘KETODAILY’. Just don’t buy that brand called Monkfruit In The Raw, as that brand is really just a bag of Dextrose, which isn’t good for you.

    1. A serving of Broccoli (by most standards) is 1/2 a Cup, so that’s what I based mine off of.

    1. Maybe something Smokey tasting, depending on your preferences.

      1. a friend of mine makes this replacing the bacon with chopped Smokehouse almonds for a vegetarian version 🙂 It’s great!

  17. I am brand new to a Keto diet, and found this recipe. Before eating Keto, I made this recipe with nearly the same ingredients. However, I did not add the sweetener then or now. It is not necessary. It is delicious without. I substituted cooked sliced pork tenderloin for the bacon,and sliced almonds for the macadamia nuts. Yummy!

  20. I used stevia rather than monkfruit sweetener and cashews instead of macadamia nuts because that’s what I had on hand, but this salad came out fantastic! Had it with guacamole chicken melt tonight and will have with pork loin tomorrow. Thanks for this keeper recipe!

  21. Could you use red wine vinegar ( that’s what I use with the non Keto version) and it still be keto

    1. I haven’t checked in a while, but I didn’t think Red Wine Vinegar had sugar in it. I could be wrong, but if it in fact doesn’t then it’s fine to use.
