Keto Brownie Recipe

This Keto Brownies Recipe is simply divine! The texture is perfect, and with a little bit of practice you can get the balance of sweetness just right. Don’t be afraid to experiment with your favorite sweeteners to see how this tuns out. There will be different amounts of artificial sweetener called for depending on which one you use.

We make this recipe from time to time around the house, and it always turns out moist and delicious. You will notice that unlike traditional brownies, this recipe also doesn’t call for oil. You are partially getting the necessary fats from the Avocado as well as the softened butter. If you do not have either a hand mixer or a stand mixer available, this will be awfully difficult to stir by hand.

IMPORTANT NOTE ABOUT BALANCING SWEETNESS AND BITTERNESS:

Also, as long as you don’t mind tasting the batter with raw egg in it, be sure that the raw batter tastes a lot sweeter than you like your finished brownies to taste because some of the sweetness will be lost in the baking process. That’s one way to know if they are sweet enough to your liking before baking them. If the raw batter tastes “just sweet enough” that means that you probably need to add more sweetener to the mix and stir again. Also, since Cocoa powder on its own is very bitter, avoid going overboard with it. You might feel tempted to add a lot of it to make the brownies taste “chocolatey” but that will probably end up making your brownies taste too bitter.

Feel free to substitute the Splenda for a sweetener of your choice, but just be aware that some sweeteners like Stevia can make this recipe taste quite bitter in our opinion. Swerve is a popular sweetener choice for people who are eating Keto, but it can be very difficult to find in some areas. If you cannot find Swerve at your local grocers, then you may need to look online to buy it. We have also had luck making this recipe with Lakanto Monkfruit Sweetener, and Pyure Sweetener.

Cooking Time: 20 Minutes

Total Time: 30 Minutes

Ingredients:

  • 1/3 Cup Cocoa Powder
  • 1 & 1/2 Cup Splenda or Swerve
  • 3 Tablespoons Vanilla Extract
  • 1/2 Tablespoon Baking Powder
  • 5 Tablespoons Adam’s Natural Peanut Butter
  • 1/2 Stick Softened Butter (No Salt Preferred for this recipe)
  • 2 Large Ripe Avocados
  • 4 Large Eggs
  • Sliced Almonds





Instructions:

  1. In a Large Mixing Bowl combine all ingredients except for the Sliced Almonds and mix well with either a Hand Mixer, Stand Mixer, or by hand (RIP Hands!).
  2. Coat a dark baking pan of your choice with butter, grease, or cooking spray.
  3. Pour batter into the pan and spread evenly on top.
  4. Sprinkle with desired amount of sliced almonds, or other nuts of your choosing.
  5. Bake in the over at 350 degrees for 20 minutes.
  6. Let cool, and then serve!

Optional: You can substitute the Peanut Butter for either Almond Butter or Cashew Butter if you prefer, or if you have a peanut allergy. Just make sure that the nut butter is unsweetened so that you are not adding any hidden carbs to your recipe!

    1. Not in this recipe, but we are working on one with Coconut Flour instead as a totally different recipe for another day.

        1. Cynthia, just make sure not to overdo the Cocoa Powder, and also to heed the advice to make sure that the batter is extra sweet before baking it. For some reason a lot of these sweeteners lose their sweetness when baked and balancing out the bitterness of cocoa powder is a little tricky.

  4. Hey I just made this recipe and it tastes really bitter and terrible. Was the 2 tablespoons of baking soda that is in the recipe actually supposed to be teaspoons?

    1. Ashley, you definitely need to adjust your amount of sweetener to compensate. It is usually the cocoa powder that makes it taste bitter to most people. If you try the recipe again, reduce the cocoa powder and maybe double your sweetener.

      1. Yeah it’s not just bitter it tastes like baking soda and burns your mouth. I had to throw mine away 🙁 it was funny though watching people at work make horrible faces when they ate it! I died laughing it was like an unintentional prank.

        1. I’m confused. The recipe calls for baking POWDER. All comments refer to baking SODA. Which should it be?

      1. It used to say 2 tablespoons they have since changed the recipe… for a good reason!

      1. Actually it does say powder in the recipe above and soda on the video. This is very confusing and will give 2 totally different results.

  5. Can you sub the peanut butter for coconut oil?

    1. Haven’t tried doing that yet. Could be worth a shot! Or almond butter or similar.

  6. What I can substitute splenda with ?

    1. Swerve or Pyure. If you use Pyure just keep in mind it’s twice as sweet per measure as Swerve or Splenda.

      1. Definitely cut the Pyure a LOT!! I am still learning how the different sweeteners work, and I only cut the amount by 1/3 (using a cup instead of a cup and a half) and the brownies are WAYYYYY too sweet. Next time I’ll start with 1/2 cup or less if I’m using Pyure. They’re really way too sweet to eat.

      1. I printed your recipe when it was first posted and my print out says 2 tablespoons glad I double checked the one online before making them!

  10. I made these, they are sooo good. I read the b. soda as half a tablespoon =1/2T…..I used the powdered peanut butter…

  11. Love this! Unlike everyone put in the right amount of baking soda, I read it as 1/2 tsp instead of table LOL. So tried to bake it as long as I could and then baked in the microwave until middle was more solid. I used Swerve only had a cup of the glandular but used their confectioners. Do NOT like stevia! Anyway, I will defiantly make this again it is delicious! Love any recipe I can use up my Avacado’s! 🙂

  14. I thought these were good. Granted, I am new to keto and have little to compare to. I used an 8×8 cake pan and had to cook these 40 minutes. I will make them again.

    1. Some people also break up some of the Lily’s Dark Chocolate bars and put those on top of the batter before baking. Just adds more to it I guess.

  15. 5 stars aren’t enough! I didn’t change anything in the recipe, but I did bake in a springform pan, and cooked for 30 minutes. (20 wasn’t long enough) I added Lilly’s chocolate chips and chopped pecans to top as soon as I pulled it from oven. Let cook completely! If there are leftovers, chill in refrigerator. They are equally as amazing cold!

  16. I have made this twice now and my husband and I LOVE IT! I always have to cook it longer I used a 1 1/2 teas of soda. So good! I see there are other recipes for Avocado brownies but this one is so good won’t try any other. I use Swerve and Swerve confection in a buttercream chocolate frosting 🙂

  18. I thought this was so good. I added 1/2 c. Sugar instead of Splenda or swerve. Also, baked another 10 mins. Going to try using a bundt pan to avoid soft center.

  19. Not bad. I used erythritol for the sweetener at the same ratio (then added a couple extra squirts of liquid stevia to sweeten the batter a bit more) because it’s what I had in my pantry. I also didn’t have almonds so I topped it with some whipped heavy whipping cream. There was still some bitterness in my batch so the HWC helped.

    1. Balancing out the Bitterness of some of the ingredients is definitely key. And I find many of the Keto Sweeteners to taste bitter after baking (especially Stevia by itself)

  20. I made this tonight; after 20 minutes they were no way done cooking. I had to cook for 40 minutes. Can you expound on this? Does the toothpick need to come out clean? Will it be giggly after 20 minutes – is that ok?

    1. Your toothpick does need to come out clean. Baking times can vary greatly depending on altitudes and other factors too. Go with the toothpick test in your case.

  21. The video shows baking soda..but the printed recipe calls for baking powder… which one is it? I really want to try these!

    1. My guess is it’s baking POWDER. Baking soda needs an acid to work as a leaven and I don’t see an acid here.
