Keto Reuben Slaw Recipe

One of the most popular sandwiches out there is the Reuben Sandwich, and there are a variety of ways to make it. Just like the sandwich, this Keto Reuben Slaw Recipe can be adapted by you to suit your own unique tastes too. You can mix it up and add some prepared horseradish to it, or some sauerkraut if you want also.

I personally like to eat some of this right away when it is fresh, but I think that it tastes even better after sitting in the fridge for at least 4 hours (usually overnight). Sitting in the fridge gives it time to draw out the moisture and also let the flavors meld together even better. This Keto Reuben can even be tossed onto some Keto Bread to make yourself a perfect keto sandwich to take to work or satisfy those mid day hunger pains.

Keto Reuben Slaw Recipe Nutrition Facts

INGREDIENTS

INSTRUCTIONS

  1. Take the half head of cabbage and cut the end off, as well a cut the cabbage in half lengthwise.
  2. Julienne Cut the cabbage into roughly 1/4 Inch thick strips.
  3. Take the Pastrami or Corned Beed and Cut that into roughly 1/4 Inch Strips too.
  4. Cut the Swiss Cheese into roughly 1/4 Inch strips as well.
  5. Dice up some Dill Pickles.
  6. In a small mixing bowl add the Chosen Foods Avocado Oil Mayo, Bragg Apple Cider Vinegar, Lakanto Monkfruit Sweetener, and the Dill Pickles and mix well.
  7. In a REALLY Large Mixing Bowl add in about half of the cabbage mixture first, and mix that with half of the Mayo mixture.
  8. Then add the remaining halves and incorporate that all together.
  9. Serve either right away, or store in the fridge for up to 2-3 days.

        1. You can either leave it out completely or try a few drops of Stevia if you still want a little sweetness.

    1. I bought these Cuisinart knives at Costco for $12.99 a set and they are REALLY sharp. Awesome price too!

        oh just read that you got your knives at Costco! I need new knives and finally have a membership to Costco. I made this recipe but with red cabbage and I feel like it had too much mayo in it. I just made it so I’m putting it in the freezer to get it cold (I don’t like warm cole slaw!). I got the pastrami at Costco and an avocado oil mayo there too. I added some of the dill pickles (Trader Joes) but not many because I don’t like the taste of those pickles. Anyway, I’ll taste it in an hour or so. Hopefully it will come out good – I love cabbage so I think I wil like this. Thanks for the recipe.

  6. 1/4 inch wide or long or both? Also, this is way too much for one person, can you just cut all of the portions in half to make it more manageble?

    1. Dee, the strips are to be about 1/4″ Wide. And the recipe is for 10 servings, not 1 person 🙂 You can cut it down to half or quarter or however much you need!

    1. That is Boar’s Head brand. I imagine that it is sold far and wide (in the Us at least).

    1. Probably! I also like to use the Hoy Fung Garlic Chili Sauce in place of their Sriracha.

  14. Reuben are made with Russian Dressing. I’d change the mayo.

    1. Reubens are made with Thousand Island Dressing, not Russian Dressing.

      1. They technically made a Thousand Island but just substituted the ketchup for the “sweetener” as ketchup is high in sugar.

        1. You could always use a sugar free ketchup.

  16. Is there an alternative to using the mayo with avocado oil since I am allergic to avocado?

    1. You could make your own Mayo with Olive Oil, or buy one that doesn’t also have Soybean or Canola Oil at the store.

        1. You can Google for a recipe. It’s easier than you think..I also make my own butter, ketchup, and BBQ sauce.

  17. Looking at this it looks great, but don’t like corn beef or pastrami. How much of a change would roast beef do to this.

    1. Use turkey pastrami it’s eccellent boars Head

    2. I used roast beef with pepperjack cheese….and dukes mayonnaise with the applecider vinegar and regular sugar…I LOVE this recipe!!!

    1. It was mentioned previously that a serving size is 1/2 cup. That may be good for a side but I would use a full cup for a meal.

      1. As with most food servings, 1 serving does not have to be a whole meal. You can eat multiple servings if you would like 🙂

  23. This was another recipe I thought yum! I have to try this! Well this time I went out, bought the ingredients and today I made it! Thank you! I haven’t even let it go in the refrigerator yet and once I tasted it, I didn’t want to stop! 🙂 I did though and am looking forward to lunch! Makes a large amount for one person so I will see if I end up eating most of it before it is no longer good. If not, I will cut it in half next time. Thank you again for taking the time to post it.

    1. The serving size is 1/10th of the yield. There are ten servings if you make the quantities in the recipe.

    1. It’s so optional that I would leave it out if you want. Otherwise Swerve is a decent substitution too.

  27. Do you know the size of the servings. I know it says 10 but I measure everything. Okay, I know I can go thru the work of measuring the finished dish and divide by 10 but no harm in asking. LOL

    1. What I would do is weigh it in grams and then divide by 10 if you want to be exact.

    I added a dash of black pepper and used little no sugar added gherkins (not keto but low carb) and no added monk fruit sweetener.

  31. I made this for lunch. I sampled before I chilled and it tastes so good and smells so good. I’m unsure if I messed up the KETO but my hubby is on a Gluten Free diet and I made sure the ingredients were gluten free. Can’t wait for him to try it this afternoon.

    1. Keto is also a Gluten-Free diet, so I think most of our other recipes might be worth a try too. Just always check you labels and your brands since some companies do toss in extra ingredients that could make theirs contain gluten (I saw this in yellow mustard one time, of all places)

    1. I’ve never heated it up personally. I would think that as long as you don’t mind warm mayo you would be alright.

    1. You can use more or less as you want to. It does help keep the fat content higher in this recipe, since cabbage doesn’t have any.

    1. Yes, you could use Mozzarella Cheese if you prefer that.

  40. This looks sooooo good! I am giving it a twist only because it’s colder weather and I think we need warm foods. I am going to stir fry the cabbage and the pastrami mix it all together and put it in a casserole dish, cover with the Swiss and bake it just until cheese melts. I will prepare this with boiled red potatoes cut in 1/4’s as a side dish for the family and cauliflower mash for myself and one granddaughter who loves the finer foods in life. I will give you an update ASAP!

  42. Pretty tasty. I didn’t care for the sweetener and I only used a 1/2 tsp. I added more pickles and that gave it more of a tangy flavor which I enjoyed. Next time i will skip the sweetener altogether.

  49. How much is 1 serving?
    That truly needs to be added to the nutritional facts list…rather than making everyone guess or have to measure the whole bowl….the bteak it down by weight or whatever…

    This is truly a pet peeve of mine.

    1. For peats sake! People, a 1/2 head of cabbage can be any amount. If you think it might be to much or not enough. Add, or take away.
      You can do this!!!!!

  50. This is tasty and easy to whittle down to a one person portion for a few days of lunches. I keep the slaw/cheese/meat in one bigger bowl and the dressing in a second bowl. Then pull the portion of slaw I want, throw some dressing on and bring it to work. Definitely a recipe I will play around with. Thinking next time I will sub pepperjack cheese and add some jalapenos.   53. This is a delicious Keto meal. I don’t know why it has such low ratings. It is a dish I feed to non keto people often and everyone loves it. I always make the full recipe and I am only feeding two people on a regular basis. It lasts several days in the fridge and tastes great. I actually only count it as about 4 servings. It seems people concentrate so much on serving size, fat, sodium content…I don’t think there is a good understanding of the science of the keto diet. If you eat within your macros you don’t have to control serving sizes or count calories. And keto dieters need the extra sodium in there diets. I guess it is hard for some people to unlearn everything that has been hammered in to them by our government…which sets the food guidelines…which is heavily lobbied by big food industries.
    Thanks for the great recipes!

  54. Just made this for St.Patricks Day meal tomorrow. I used a whole head of cabbage and 15oz. of olive oil mayonnaise. It’s already delicious but a little too mayo tasting . Put it away though for tomorrow when I’ll either add more vinegar or serve as is with roasted corned beef and french fries. Thank you!

    1. We just made this and it is wonderful. Followed the recipe exactly, then at last minute thru in some hot peppers. This is a delicious recipe. We weighted it all, divided the ounces by 10 to get our serving sizes.
      Also with every head of cabbage being different in size (or weight) the serving size could be a little different. Weigh ing is not that difficult. Your size can be different depending if it is a side dish or main dish and if keto, you need to work into your plan. Worth making, delicious. Thanks for the recipe.

  55. I made this a couple of times. One of my husbands favorites. However I’ve never come close to using 12 oz Mayo (I thought that was a typo). I use 4 oz and that’s a lot. Also I use a whole head of cabbage, 3 tsp ACV, and no sweetener. Comes out great. Thanks for the recipe!

  56. I’ve made this a few times with variations like the addition of horseradish sauce or Dijon mustard. Made it this evening but had to use the purple cabbage as Whole Foods didn’t have the regular…still was tasty 😋

  63. This was delicious. I would prefer a little less mayo so next time I’ll cut that back to 8 oz. If using Keto bread then I think the 12 oz of mayo is fine.
