Keto Swedish Meatballs Recipe

One of the things I love best about eating Keto is all the rich flavors that we get to enjoy, and these Keto Swedish Meatballs are no exception. Swedish Meatballs can be prepared as a Keto-friendly recipe and they remind me of a mix between Meatloaf and Beef Stroganoff. They go great with that rich and creamy sauce that practically makes them melt in your mouth.

We serve these alongside some Cheesy Riced Cauliflower, with the ingredients and instructions included below. But sometimes we also use a hand mixer or food processor to turn the riced cauliflower into Mashed ‘fauxtatoes’ so that it is more traditional in its presentation too.

You could make these meatballs as all-beef Swedish Meatballs too if you want to double the beef and leave out the ground pork, but there seems to be a lot more flavor when the two meats are used. You could also make them with ground chicken or other ground meats too if you wish, but traditionally these would just be made with the Beef and Pork.

KETO SWEDISH MEATBALLS RECIPE

INGREDIENTS

INSTRUCTIONS

MEATBALLS & SAUCE

  1. In a Large Mixing Bowl combine 2 Large Free-Range Eggs, 1/4 White Onion (Diced), 1 Tablespoon Fresh Parsley, 1/4 Cup Almond Flour, 1 Teaspoon Pink Himalayan Salt, 1 Teaspoon Granulated Garlic, 1/2 Teaspoon Allspice, 1/4 Teaspoon Nutmeg, 1 Pound Grass-Fed Ground Beef, and 1 Pound Ground Pork.
  2. Stir the ingredients together or incorporate them by hand until they are well mixed.
  3. In a Large Frying Pan over Medium-High Heat, add 1 Tablespoon of Olive Oil.
  4. Pinch off Golf Ball sized chunks of the meat mixture and roll them into balls. Cover and cook the meatballs for about 10 minutes, or until cooked throughout. It is best to turn the meatballs every few minutes to brown the outer edges as evenly as possible.
  5. When the meatballs are done cooking, remove from the frying pan and place on Paper Towels then set aside for now.
  6. In the same frying pan with the retained drippings, add in 8 Tablespoons of Grass-Fed Butter and melt down. Then pour in 1 Cup of Heavy Whipping Cream, 1/2 Cup Coconut Aminos, 1 Tablespoon Dijon Mustard, 1/2 Teaspoon Pink Himalayan Salt, 1/2 Teaspoon Black Pepper, and whisk together. Then add in 1 Cup of Sour Cream, and whisk that into the sauce. Next add in 3 Cups of Beef Bone Broth, and bring up to a simmer.
  7. If you wish to thicken the sauce, you may now add in about 1/2 Teaspoon of Xanthan Gum, and whisk that into the sauce.
  8. Add the Meatballs back into the Frying Pan and warm them back up in the sauce for a few minutes before serving hot.

CAULIFLOWER RICE

  1. Separate the Florets and Stalks from the head of Cauliflower, and either chop them into small pieces, or use a cheese grater to reduce them into small rice-sized pieces.
  2. Place the Cauliflower into a large Microwave Safe Container, and pour enough water in to cover the top of the Cauliflower.
  3. Place a lid loosely on top of the container, and microwave the Cauliflower for about 5-10 minutes or until soft, but not mushy.
  4. Stain away any excess water, and pour the cauliflower into some Cheese Cloth.
  5. Use the Cheese Cloth to squeeze out any additional moisture from the Cauliflower to reduce the liquidity of this side dish.
  6. In a Large Frying Pan over Medium Heat add 3 Tablespoons of Grass-Fed Butter, then add in the strained Cauliflower and season with 1 Teaspoon Pink Himalayan Salt, 1 Teaspoon Granulated Garlic, and 1/2 Teaspoon of Black Pepper.
  7. Add 1/2 Cup Shredded Parmesan Cheese and 1/2 Cup Shredded Mozzarella Cheese to the Cauliflower and stir in until melted. Optionally season with fresh chopped Chives and serve.
